Portekiz’in gururu

Portekiz’de bana ‘bacalhau’ derler ve tuzlanmış morina ülke genelinde çok yaygın bir yemektir. Portekizliler Kuzey Amerika’ya ilk vardıkları 1497 yılından beri beni bu şekilde hazırlayıp yer. Morinayı tuzlayarak deniz seferlerinin en önemli sorunlarından birini çözdüler: Yolculuk boyunca yiyeceklerin saklanması.
